Genmaicha Crème Brûlée with Strawberries

As an alternative to the classic vanilla crème brûlée, Naturellement and Co came up with this delicious Genmaicha crème brûlée with strawberries.

The tangy sweetness of the strawberries combined with the toasted rice notes of the Genmaicha creates an explosion of flavors.

Warning: can be addictive!


For 4 crème brûlées:

  • 120 ml of single cream (dairy or plant-based)
  • 120 ml of milk (dairy or plant-based)
  • 3 egg yolks
  • 25 g of caster sugar
  • A few drops of bourbon vanilla extract
  • Brown sugar for caramelizing the top
  • Fresh strawberries


  • Preheat the oven to 100 °C (212 °F).
  • In a saucepan, bring the milk and cream to the boil with the vanilla extract. Once the mixture reaches boiling point, remove from heat, let the temperature drop a little, then and add the Genmaicha tea.
  • Let it infuse for 1 to 2 minutes, stirring regularly. Strain the tea leaves and rice grains using a fine sieve.
  • Whisk together the egg yolks and caster sugar vigorously until the mixture is pale and creamy. Add the hot vanilla milk and cream and mix well.
  • Pour the mixture into ramekins and bake for about 90 minutes. When done, the crème brûlée should still be slightly wobbly in the middle but firm around the edges.
  • Once cooled, put them in the fridge for at least 2 hours. When ready to serve, sprinkle with brown sugar and use a kitchen torch to caramelize the top of each crème brûlée.
  • Top with fresh strawberries: delicious!
